To keep this recipe healthy, we’re using gluten-free multigrain bread to ensure a full serving of whole grains. It also contains no added sugar, only quality maple syrup!

Frying the Perfect French Toast

French toast is incredible, but cooking it perfectly can get finicky. You want a nice golden crust on the outside, and a tender, fluffy middle. The custard should provide both resolutions in one element!

To ensure the perfect crust, your custard will need some sweetener inside. This creates a crust on the outside of the bread and the sugars caramelize in the hot pan. The crust on the outside seals in the tender, eggy middle.

Lastly, be sure you cook your French toast at medium to medium-high heat. Too low of a flame and your meal will be soggy and unpleasant. Don’t be afraid of cooking with high heat, it will create the best French toast texture of your life! Just watch it closely as it cooks to keep anything from burning.

Ingredients in Banana Maple French Toast

  • 2 eggs
  • ½ cup oat milk (or milk of choice)
  • Pinch of cinnamon
  • ⅛ cup maple syrup, plus more for serving
  • 1 teaspoon vanilla extract
  • 8 slices of gluten-free multigrain bread
  • 2 tablespoons butter, plus more for serving
  • 2 bananas, sliced, for serving

How to Make Banana Maple French Toast

In a large shallow bowl, crack your eggs. Add the oat milk, cinnamon, maple syrup, and vanilla. Whisk very well to break up the yolks and combine them into a homogenous mixture.

Melt the butter in a skillet over medium heat.

Carefully dip each piece of bread into the custard. Saturate both sides of the bread.

Quickly remove the bread and add it to the hot skillet. Repeat with the rest of the bread slices. You will likely have to cook these in a few batches, with 2-4 pieces of French toast in each batch.

Cook on the first side for 2-3 minutes. Once browned, flip the toast and cook for another 2 minutes. When both sides are golden brown, remove them to a plate.

Plate the French toast, then, top with banana slices, maple syrup, and butter. Serve warm.
