Plus, almost everyone has a blender or a food processor, which lends help in making many different recipes. Using all of these things, you can make these easy Blueberry Banana Blender Pancakes on any given weekend!

Simply blend the batter and fold in the blueberries before cooking in a pan or on a griddle. These pancakes are tender, fluffy, and so simple to make. Plus, they are vegan if you fry in oil or vegan butter!

How Do You Make Pancakes in a Blender?

Blender pancakes are surprisingly easy, especially when using gluten-free ingredients! All you have to do is load up the blender with your pancake ingredients and blitz!

Allow the pancake batter to sit for about 5 minutes. This allows it to thicken slightly for a better pour into the pan. You can make your pancakes big or small, whichever you prefer!

To avoid the batter becoming a bluish color, I like to fold in my blueberries after the batter has been blended. This way, you get whole, bursting blueberries in every bite!

Ingredients in Blueberry Banana Blender Pancakes

  • 1 cup gluten-free rolled oats
  • ¼ cup oat milk
  • 1 large banana, ripe
  • 1 tbsp baking powder
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • ¾ cup fresh blueberries
  • 1-2 tbsp butter, for cooking (or vegan butter if plant-based)

How to Make Blueberry Banana Blender Pancakes

Begin by getting out your food processor or blender. 

Add the oats, oat milk, banana, baking powder, lemon juice, honey, and vanilla to the machine.

Blend on high until everything is smooth and homogenous.

Pour the batter into a large pourable measuring cup. Fold in the blueberries.

In a nonstick skillet, melt the butter over medium heat. Pour some pancake batter into the pan in your desired size and shape.

Cook for 2-3 minutes before flipping the pancakes. The tops should have lots of bubbles when they are ready to turn.

Continue cooking on the second side for 1-2 minutes.

Remove the pancakes to a plate and enjoy with butter, syrup, and additional blueberries or bananas.
