Blueberry Banana Oat Bars

Introducing make-ahead Blueberry Banana Oat Bars, a homemade hand-held breakfast that is perfect for grabbing on the run. They’re packed with juicy blueberries, sweet bananas, and wholesome GF oats to keep you full until lunch!

Storing Your Bars

This recipe is as simple as assembling, baking, and storing. Once your bars have baked and cooled, you’ll want to store them properly so that they last up to 5 days, or throughout your work week!

Slice your cooled bars and place them in an airtight container. If you must layer the bars on top of one another to fit, place pieces of parchment paper between the bars to keep them from sticking. 

Now, you can grab your bars on the go!

Ingredients in Blueberry Banana Oat Bars

  • 3 ripe bananas, mashed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup sugar
  • 2 cups gluten-free rolled oats
  • ¼ cup gluten-free oat flour
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup blueberries

Optional Toppings:

  • 2 tablespoons Greek yogurt
  • A drizzle of maple syrup

How to Make Blueberry Banana Oat Bars

Preheat the oven to 350 degrees F.

In a large bowl, mash your bananas.

Crack your egg and mix well with the bananas.

Add the vanilla and sugar to the banana mixture. Whisk well to combine.

To the same bowl, fold in the oats, oat flour, cinnamon, baking soda, and salt using a spatula. Add the blueberries. Fold only until no dry spots remain. Do not overmix.

Add the batter to a greased 9×9 baking dish.

Bake in a preheated oven for 30-35 minutes until a toothpick inserted into the center of the bars comes out clean.

Remove from the oven and allow to cool completely before slicing into 9 bars.

Notes

For added protein, serve each bar with a heaping spoonful of Greek yogurt and a drizzle of maple syrup.
