One reason for this is the use of oats and oat flour. Both combined add a lovely texture and flavor without needing to measure out xanthan gum or other binders. The end texture is a cross between baked oats and a sheet cake.

Optionally, you can top this cake with anything you like; peanut butter, Nutella, your favorite frosting, or simply melted chocolate. No matter your favorite flavor combinations, this cake can be customized to the max!

Ingredients in One Bowl Chocolate Banana Cake 

  • 3 very ripe bananas, mashed
  • ½ cup butter, melted
  • ⅔ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 ⅓ cups gluten-free rolled oats
  • ¾ cup gluten-free oat flour
  • ¼ teaspoon salt
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ cup chocolate chips, plus more for topping
  • ¼ cup walnuts, plus more for topping

How to Make One Bowl Chocolate Banana Cake

Preheat the oven to 350 degrees F. Grease an 11 by 7-inch baking dish.

Mash your bananas well in a large bowl. Beat in the melted butter, sugar, eggs and vanilla.

In the same bowl, add the oats, oat flour, salt, baking powder, baking soda, and cinnamon. Fold the dry ingredients into the wet until a few dry spots of flour remain.

Add the chocolate chips and walnuts. Fold until there are no dry spots of flour left. Do not overmix.

Pour into the greased baking dish. Smooth the top with a spatula. Top with more chocolate chips and nuts.

Bake in a preheated oven for 25-30 minutes until a toothpick comes out mostly clean with a few crumbs.

Remove from the oven and allow to cool for 15 minutes before serving.
