French Toast Crispy Treats

Do you love the maple cinnamon flavors of traditional French toast? Try these insanely delicious French Toast Crispy Treats, with all of the flavors of a cornflake-coated French toast with none of the hard work!

Welcome back to more summer sweet selections! While each of us would love to have a stack of coated French toast each morning, that would not keep us healthy. Instead, save the sweets for dessert and lighten them up slightly!

French Toast Crispy Treats have every element of cornflake-coated French toast with none of the hassle. I use gluten-free cornflakes since that is what many folks coat their French toast in before pan-frying. Flavors of maple, cinnamon, butter, and vanilla perfume these crisp little treats, which taste just like a healthy stack of French toast!

Why Cornflakes?

You’ll notice that I used GF cornflakes in this recipe instead of rice cereal. If you have ever had fancy French toast, oftentimes restaurants will coat their toast in cereal before pan-frying. This gives an amazing crispy texture on the outside of the bread.

GF cornflakes offer all of the crispy texture that you want. They highlight the delectable flavors of French toast packed inside these little treats. All in all, these crispy treats taste exactly like an upscale French toast. The only element missing is the bread and eggs! This is the perfect splurge dessert (or naughty breakfast) this summer.

Ingredients in French Toast Crispy Treats

  • 1 stick unsalted butter
  • 1 package marshmallows
  • ¼ cup maple syrup (can also substitute 2 tsp maple extract)
  • ¼ tsp ground cinnamon
  • 1 pinch of salt
  • 1 tsp vanilla extract
  • 4 cups gluten-free cornflakes

How to Make French Toast Crispy Treats

In a large pot, heat the butter, marshmallows, maple syrup, cinnamon, and salt over low heat until the marshmallows start to melt, about 5 minutes. Whisk every now and then to incorporate the ingredients.

Once you have a homogeneous mixture, turn off the heat and add the vanilla. Stir to combine.

Then, add the cornflakes. Using a nonstick spatula, fold the ingredients so that the marshmallow mixture coats the cereal.

Line a baking sheet with parchment paper or plastic wrap. Dump the crispy treat mixture onto the lined baking sheet. Using another piece of plastic wrap, press the mixture firmly to even out the bars.

Allow to cool completely in the fridge for 2-4 hours.

Once cooled, cut the bars into bite-sized pieces. Serve and enjoy!
