S’mores Cookie Pie

Want to be the life of the party and still make a gluten-free dessert? S’mores Cookie Pie is the perfect crowd-pleasing dessert made with a chocolate cookie crust, marshmallow fluff, and melted chocolate!

Cookout season is upon us! Sometimes, we volunteer to bring the potato salad so we at least have something to eat without bread. Other times, we offer to host or bring our own almond flour buns.

For a show-stopping dessert perfect for a crowd, S’mores Cookie Pie offers a chocolatey bite and does not require refrigeration! The base is a pre-made gluten-free chocolate cookie base, followed by a layer of marshmallow fluff and topped with gluten-free mini cookies or graham crackers. The recipe is good enough to share!

Pre-Made, Yet Upscale

Sure, we all want to take some help from the grocery store when possible. Of course, if you would like to use a tried-and-true gluten-free cookie recipe as your base, go for it! To make things easier, go for Sweet Loren’s Fudgy Brownie cookie dough, located in the refrigerated section of your local supermarket. This is the dough that was used in this recipe.

Using a premade base gives the perfect amount of chocolate and saves you time for the important things. The fluff is also premade, however, when assembled, this cookie pie is so stunning, no one will suspect how much the grocery store helped!

How to Make S’mores Cookie Pie

Begin by preheating the oven to 325 degrees F.

Lay out the cookie dough pieces evenly in a pie plate.

Use your fingers to press the dough into an even base layer, going up the sides of the pan slightly.

Bake for 12-14 minutes until the cookie is set. Remove from the oven and allow it to cool slightly.

Once cool, add the container of fluff and spread it into an even layer.

Next, top with some cookies.

Finally, using a fork, drizzle the melted chocolate over the top in a decorative manner.

Place into the fridge to set for an hour before serving.
