Nothing is more nostalgic than a PB&J alongside some pretzels. Many of us had this as a regular lunch growing up, and perhaps even still today! The smooth peanut butter along with the sweet berries in the jam next to crunchy, salty pretzels is pure heaven!

Take those classic lunchtime flavors and create a new experience with these PB&J Pretzel Parfaits! Crushed gluten-free pretzels are layered with some freshly sweetened strawberries and peanut butter Greek Yogurt, perfect for a sweet and salty breakfast or dessert!

Balancing Sweet and Salty

Finding the right balance between sweet and salty foods can be tough. You want them to not compete with one another, yet still enhance each flavor. You will notice that the strawberries in these parfaits are slightly sweetened, as is the peanut butter Greek yogurt. Without adding some sweetness to balance the saltiness of the pretzels, the dish would lose its juxtaposition.

So if you are on a sugar-free diet, feel free to use a keto sweetener or syrup to replace the white sugar in the strawberries or the honey in the yogurt. Then, be sure to use salty pretzels for that mouth-watering effect!

Ingredients in PB&J Pretzel Parfaits

  • 1 container strawberries, quartered
  • 1 teaspoon sugar
  • 2 cups plain Greek yogurt
  • 1 cup creamy natural peanut butter
  • a tablespoon honey
  • 1 teaspoon vanilla
  • 1 cup gluten-free pretzels, crushed lightly

How to Make PB&J Pretzel Parfaits

Quarter your strawberries and add them to a bowl. Sprinkle with the sugar and mix to combine. Set aside in the fridge for at least an hour to allow the natural juices to emerge.

Next, add the Greek yogurt, peanut butter, honey, and vanilla to a bowl. Mix well so that everything is well incorporated.

Add your whole pretzels to a ziptop bag and crush lightly with a rolling pin. Set aside.

Gather 4 glass or clear plastic cups. Start with a heaping tablespoon of crushed pretzels in the bottom of the dish.

Then, top with a few tablespoons of the peanut butter mixture.

Next, top with a heaping tablespoon of strawberries and syrup.

Repeat with pretzels and the last layer of the peanut butter mixture. Top with a strawberry slice and a whole pretzel.

Cover and refrigerate until ready to serve.
