Rawr! Monster cookies are back! If you didn’t know, a monster cookie is a sweet treat that has a ton of mix-ins added right into the cookie dough. You might see candy, potato chips, coconut, and an array of many other flavors added to these cookies. They are so customizable, so everyone loves them!

Flourless Monster Cookies are the perfect gluten-free alternative that is nowhere near ordinary. They are similar to if a peanut butter cookie had a love triangle with an oatmeal cookie and an M&Ms cookie. Truly, you can add anything you like to monster cookies!

These in particular have peanut butter, oats, candy-coated chocolate, chocolate chips, GF pretzels, and toasted walnuts. No flour or gluten to be found! The best part of all is that kids and adults love to make and eat these cookies. Make sure to get the kiddos in the kitchen with you when you bake these insanely delicious cookies!

Optional Mix-Ins

Just like how all people are different, every monster cookie is different. They are totally customizable to anyone’s tastes. Monster cookies can be made vegan, you can add coconut, or you can add your favorite candy! Love toffee bars? Toss them in!

Fans of sweet and salty combinations can add pretzels, just like this exact recipe. You can also add your favorite potato chips for a salty crunch! The sky is the limit when flavoring these cookies.

For a healthy alternative, leave out the candy in favor of more nuts and dried fruit. You can even add mashed banana to the batter! If you can dream it, you can make customized monster cookies.

Ingredients in Flourless Monster Cookies

  • 1 cup creamy natural peanut butter
  • 2 tbsp melted unsalted butter
  • ⅔ cup packed light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract 
  • 1 cup GF rolled oats
  • ½ tsp baking soda
  • Pinch of cinnamon
  • ½ cup candy-coated chocolates
  • ½ cup chocolate chips
  • a ½ cup crushed GF pretzels
  • ½ cup chopped toasted walnuts

How to Make Flourless Monster Cookies

Begin by preheating the oven to 350 degrees F. Grease a cookie sheet or line it with parchment paper.

Whisk the peanut butter, melted butter, light brown sugar, and eggs in a large bowl until well mixed.

Using a spatula, mix the oats, baking soda, and cinnamon into the wet ingredients.

Fold in your candy-coated chocolates, chocolate chips, pretzels, and walnuts until just combined.

Using a cookie scoop, scoop the cookies onto the baking sheet about 1-2 inches apart. Roll and flatten slightly. Add a few of the mix-ins on top of the cookies, if you like.

Bake for 14-15 minutes or until the cookies are lightly browned on the bottom and cooked through. Remove from the oven and transfer to a wire rack to cool completely before serving.
