Keto Balsamic Marinated Tomatoes

Warmer weather calls for a light, delicious snack that you can take on a picnic, to a potluck, or to chill on the couch with. Keto Balsamic Marinated Tomatoes is a sweet and tangy dish that can be served on its own!

When you can, take advantage of the local produce in your grocery store. If you see some delicious-looking cherry tomatoes, grab them! They can be made into so many different things!

Other household staples such as garlic, basil, vinegar, and olive oil mix with tomatoes to create these Balsamic Marinated Tomatoes! Simple yet scrumptious, this dish is sure to please anyone.

Simply assemble this dish and allow the tomatoes to soak in the flavors for a few hours in the fridge. The tomatoes will marinate and soak up all of the delicious herbs and garlic.

What If I Hate Tomatoes?

You may think you hate tomatoes. Sad, colorless tomatoes are not good, yet are served on most menus. Does anyone else end up removing tomatoes from a sandwich because of the unpleasant texture?

Marinated tomatoes are different. Because they are soaking in a flavorful solution for hours, they take on the flavors of herbs and garlic beautifully. Plus, if you start with ripe, in-season tomatoes, this dish will turn out even better!

Even if it is not optimal tomato season, these Balsamic Marinated Tomatoes are delicious from the marinating process. This recipe has converted tomato-haters in the past, so you know it’s good!

Ingredients in Balsamic Marinated Tomatoes

  • 2 pints cherry tomatoes, halved
  • ¼ cup extra virgin olive oil (the good stuff!)
  • ¼ cup aged balsamic vinegar
  • ½ cup freshly chopped basil
  • 2 garlic cloves, minced
  • Pinch of crushed red pepper flakes
  • 1 tsp salt
  • ½ tsp freshly ground pepper

How to Make Balsamic Marinated Tomatoes

Begin by halving your tomatoes and adding them to a bowl with a lid. If you don’t have a lid, get some plastic wrap ready. 

Add the olive oil, balsamic, basil, garlic, salt, and pepper. Mix everything together very well so that the tomatoes are coated in the dressing.

Cover with the lid and place in the fridge for a minimum of 4 hours, but overnight is best.

Store the marinated tomatoes for up to 3 days in the fridge. Add to breakfast scrambles or anything you like!

  • 2 pints cherry tomatoes, halved or quartered, depending on size
  • 1/4 cup extra virgin olive oil (the good stuff!)
  • 1/4 cup aged balsamic vinegar
  • 1/2 cup freshly chopped basil
  • 2 garlic cloves, minced
  • 1 pinch crushed red pepper flakes
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • Rustic gluten-free bread, sliced and toasted

Instructions

  • Add the olive oil, balsamic, basil, garlic, salt, and pepper. Mix everything together very well so that the tomatoes are coated in the dressing.

  • Spoon some of the marinated tomatoes on your plate. Top with fresh mozzarella or vegan cheese, if desired.
  • When ready to serve, toast your bread. Spoon some of the marinated tomatoes over the crusty bread. Top with fresh mozzarella or vegan cheese, if desired.
  • Store the marinated tomatoes for up to 3 days in the fridge. Add to breakfast scrambles, or anything you like!
