Need a hot and healthy breakfast for one? These Chocolate PB Baked Oats are filling, not too sweet, and come together in a pinch. The best part is that you can make enough for one!

Ingredients
  

  • 1/2 cup gluten-free rolled oats
  • 1 tbsp flax seeds
  • 1/4 tsp baking powder
  • 1 tbsp Dutch-processed cocoa powder
  • 2 tbsp peanut butter
  • 1/3 cup oat milk
  • 1 tbsp maple syrup or honey
  • 1 tbsp vegan chocolate chips, plus more for serving

Instructions
 

  • Preheat the oven to 350 F.
  • Combine the oats, flax seeds, baking powder, and cocoa powder in a bowl.
  • Incorporate the peanut butter until the mixture is crumbly.
  • Then, stir in the oat milk, maple syrup, and most of the chocolate chips until homogenous.
  • Place the mixture in a greased oven-safe dish and top with more chocolate chips.
  • Bake 15 minutes or until the oats are puffed and golden brown on top. Remove from the oven and allow to cool slightly before eating.
