Blueberry Banana Blender Pancakes

Who doesn’t love a quick family breakfast recipe? Look no further than these Blueberry Banana Blender Pancakes, made with blended gluten-free oats and juicy blueberries!

Ingredients
  

  • 1 cup gluten-free rolled oats
  • 1/4 cup oat milk
  • 1 large banana, ripe
  • 1 tbsp baking powder
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 3/4 cup fresh blueberries
  • 1-2 tbsp butter, for cooking (you can also use vegan butter)

Instructions
 

  • Begin by getting out your food processor or blender.
  • Add the oats, oat milk, banana, baking powder, lemon juice, honey, and vanilla to the machine.
  • Blend on high until everything is smooth and homogenous.
  • Pour the batter into a large pourable measuring cup. Fold in the blueberries.
  • In a nonstick skillet, melt the butter over medium heat. Pour some pancake batter into the pan in your desired size and shape.
  • Cook for 2-3 minutes before flipping the pancakes. The tops should have lots of bubbles when they are ready to turn.
  • Continue cooking on the second side for 1-2 minutes.
  • Remove the pancakes to a plate and enjoy with butter, syrup, and additional blueberries or bananas.
