Blueberry Banana Oat Bars

Make your morning super easy with these make-ahead Blueberry Banana Oat Bars, the perfect gluten-free breakfast for a family on the go.

Ingredients
  

  • 3 ripe bananas, mashed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup sugar
  • 2 cups gluten-free rolled oats
  • 1/4 cup gluten-free oat flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup blueberries

Optional Toppings:

  • 2 tbsp Greek yogurt
  • a drizzle of maple syrup

Instructions
 

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mash your bananas.
  • Crack your egg and mix well with the bananas.
  • Add the vanilla and sugar to the banana mixture. Whisk well to combine.
  • To the same bowl, fold in the oats, oat flour, cinnamon, baking soda, and salt using a spatula. Add the blueberries. Fold only until no dry spots remain. Do not overmix.
  • Add the batter to a greased 9x9 baking dish.
  • Bake in a preheated oven for 30-35 minutes until a toothpick inserted into the center of the bars comes out clean.
  • Remove from the oven and allow to cool completely before slicing into 9 bars.

Notes

For added protein, serve each bar with a heaping spoonful of Greek yogurt and a drizzle of maple syrup.
