One Bowl Chocolate Banana Cake

Ingredients
  

  • 3 very ripe bananas, mashed
  • 1/2 cup butter, melted
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 1/3 cups gluten-free rolled oats
  • 3/4 cup gluten-free oat flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 cup chocolate chips, plus more for topping
  • 1/4 cup walnuts, plus more for topping

Instructions
 

  • Preheat the oven to 350 degrees F. Grease an 11 by 7-inch baking dish.
  • Mash your bananas well in a large bowl. Beat in the melted butter, sugar, eggs and vanilla.
  • In the same bowl, add the oats, oat flour, salt, baking powder, baking soda, and cinnamon. Fold the dry ingredients into the wet until a few dry spots of flour remain.
  • Add the chocolate chips and walnuts. Fold until there are no dry spots of flour left. Do not overmix.
  • Pour into the greased baking dish. Smooth the top with a spatula. Top with more chocolate chips and nuts.
  • Bake in a preheated oven for 25-30 minutes until a toothpick comes out mostly clean with a few crumbs.
  • Remove from the oven and allow to cool for 15 minutes before serving.
