American football is celebrated at the end of the season with their main event, and the final game of the year, the Super Bowl. Everyone, young and old, gathers to watch some sports and eat some appetizers. Many folks make huge game-day spreads to feed their friends and family!

Sometimes, us gluten-free folks have less to eat on a game-day spread. Bring your own touchdown-worthy appetizer with these BBQ Chicken Flatbread Pizzas, the perfect small bite or main course for all ages. It all starts with gluten-free pitas or flatbreads topped with tender chicken smothered in BBQ sauce.

Main Course or Appetizer?

This recipe can very easily be doubled for a large crowd. Also, to share these pizzas as an appetizer, feel free to cut them “Chicago-style” and cut into squares; about 3 cuts horizontally and 3 cuts vertically. This way, everyone gets a taste of these delicious pizzas and you’ve contributed a delicious appetizer to share!

Of course, if you do not want to share these tasty pies, no worries. One recipe is enough for a family of 3 to each get a whole pizza to themselves. The bottom line is that these BBQ Chicken Flatbread Pizzas are perfect for dinner or a party!

Ingredients in BBQ Chicken Flatbread Pizzas

How to Make BBQ Chicken Flatbread Pizzas

Begin by pulling the meat from the bones of your rotisserie chicken. Discard the bones, skin, and any miscellaneous cartilage. Place into a bowl.

Top the chicken with half of the BBQ sauce and toss together. The chicken should be nicely coated in BBQ sauce. Set aside.

Preheat the oven to 400 degrees F.

Lay 3 GF flatbreads on a baking sheet greased with olive oil. You may need two sheets to fit the flatbreads. Divide the rest of the BBQ sauce evenly among the pitas. Spread the sauce leaving a ½-inch border around the edges. This is the “pizza sauce” layer.

Top with an even layer of pulled chicken. Then, top with cheese.

Finish with a few caramelized onions and a sprinkle of dried oregano on each pizza.

Bake for 10-15 minutes in a preheated oven until the cheese is melted and the crust is crisp.

Slice into shareable squares and serve as a main meal for 3-4 or appetizer for 6-8.
