Summertime calls for quick and easy recipes so that you can get back outside and enjoy the sunshine. Maybe your kids are taking a dip in the pool and need fuel to keep going. Maybe you’re dipping your toes in the pool, relaxing with a book, and need a comforting snack. No matter who you are, Homemade Pizza Bagels are for you!

Homemade pizza bagels start with a gluten-free bagel thin, topped with tomato sauce, layered with cheese, and then sprinkled with your favorite toppings. You can add any pizza topping you like for a variety! Bake for just a few minutes and you have the easiest, most fabulous summertime lunch ever.

What Bagels Should I Use?

Quite obviously, we need a delightful gluten-free bagel for the base of these Homemade Pizza Bagels. However, we don’t want anything too “bready.” After all, it is summer and a light lunch is a goal here!

I found these amazing gluten-free bagel thins at the local market. They are super thin and crisp up very nicely when toasting, much like a thin and crispy pizza crust. They are also amazing with a shmear of strawberry cream cheese! If you have other GF bagel brands local to you, you can use those.
