This Ultimate Veggie Noodle Stir Fry is a filling, vegetarian meal that uses just as many veggies are there are noodles! The veggies are sauteed at high heat to get some char before deglazing with a homemade sauce and tossing with noodles.
Within 20 minutes, you have an ultra-healthy meal that will fill up the whole family. Plus, GF folks get their noodle fix with tasty, al-dente rice noodles!
What Veggies Should I Use?
A better question would be, what are your favorite vegetables? Any vegetables can go into this amazing stir fry, it just depends on what you have. For this recipe, I used:
- Shaved brussels sprouts
- Broccoli
- Cauliflower
- Carrot
- Kale
- Onion
- Spinach
- Peapods
- Cabbage
Since this is the Ultimate Veggie Noodle Stir Fry, I used quite a lot of veggies. If you prefer more noodles to veg, be sure to add less in favor of more noodles.
Ingredients in Ultimate Veggie Noodle Stir Fry
- 6 oz. dried rice noodles, prepared as per the package directions
- ¾ cup veggie broth
- ¼ cup tamari
- 3 cloves garlic, sliced
- 1 tbsp cornstarch
- 1 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- 2 tsp sesame oil
- 1 tsp crushed red pepper flakes
- Salt and pepper, to taste
- 1 tbsp vegetable oil
- 1 cup shredded brussels sprouts
- 1 cup broccoli florets, sliced thin
- 1 cup cauliflower florets, sliced thin
- 1 cup crinkle cut carrots
- 1 cup kale, washed and trimmed
- 1 small onion, sliced
- 1 cup peapods
- ½ cup shredded cabbage
- 2 handfuls spinach
- Sriracha or Sambal, for serving
- 2 tbsp freshly chopped cilantro, for serving
How to Make Ultimate Veggie Noodle Stir Fry
Begin by preparing the noodles for stir-frying based on the package instructions.
For the sauce, add the veggie broth, tamari, garlic, cornstarch, vinegar, honey, sesame oil, chili flakes, salt, and pepper to taste. Whisk until combined and set it aside.
Meanwhile, prep your veggies. Once ready, add the vegetable oil to a large saute pan or wok. Turn the heat to medium-high.
Add the veggies aside from the spinach and fry for about 3 minutes until wilted.
Drain the noodles and add them to the wok with the veggies. Also, add the sauce to the pan along with the spinach.
Stir fry for 1-2 minutes until the sauce has thickened and the noodles have absorbed the flavors.
Serve the stir fry with some Sriracha and cilantro on top. Enjoy!
