Flourless Monster Cookies

Ever wanted a cookie that was “everything but the kitchen sink” flavored? These incredible Flourless Monster Cookies are thick, chewy, and decadent with oats, peanut butter, candy, pretzels, and nuts all in one kid-friendly cookie!

Servings 12 cookies

Ingredients
  

  • 1 cup creamy natural peanut butter
  • 2 tbso unsalted butter, melted
  • 2/3 cup packed light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup GF rolled oats
  • 1/2 tsp baking soda
  • pinch of cinnamon
  • 1/2 cup candy-coated chocolates
  • 1/2 cup chocolate chips
  • 1/2 cup crushed GF pretzels
  • 1/2 cup chopped toasted walnuts

Instructions
 

  • Begin by preheating the oven to 350 degrees F. Grease a cookie sheet or line it with parchment paper.
  • Whisk the peanut butter, melted butter, light brown sugar, and eggs in a large bowl until well mixed.
  • Using a spatula, mix the oats, baking soda, and cinnamon into the wet ingredients.
  • Fold in your candy-coated chocolates, chocolate chips, pretzels, and walnuts until just combined.
  • Using a cookie scoop, scoop the cookies onto the baking sheet about 1-2 inches apart. Roll and flatten the cookies slightly. Add a few of the mix-ins on top of the cookies, if you like.
  • Bake for 14-15 minutes or until the cookies are lightly browned on the bottom and cooked through. Remove from the oven and transfer to a wire rack to cool completely before serving.
