Servings 6 rolls

  • 6 slices gluten-free multigrain bread
  • 6 tbsp softened cream cheese
  • 1/2 cup fresh blueberries
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1/8 tsp cinnamon
  • 1/2 tbsp brown sugar
  • 2 tbsp milk or cream
  • 2 tbsp butter
  • Maple syrup, for topping

  • Lay a slice of bread on a cutting board and roll it with a rolling pin to flatten. Cut off the crust ends.
  • Spoon a tablespoon of cream cheese on the bottom ¼ of the bread. Stud the cream cheese with a line of 5-6 blueberries.
  • Roll the bread over the filling into a cigar shape. Pinch to secure the seam. Repeat with the remaining bread, cream cheese, and blueberries. Be extra careful when rolling, as GF bread can be pretty delicate.
  • Next, whisk your eggs along with the vanilla, cinnamon, brown sugar, and milk.
  • Heat a skillet over medium heat. Melt the butter in the pan. Dunk each roll into the custard mixture and place it into the hot pan. Cook the rolls on all sides until browned.
  • Remove the rolls from the pan. Serve with maple syrup and extra blueberries.
