- 2 boneless, skinless chicken breasts
- 1/2 cup Caesar dressing (gluten-free)
- 1 head romaine, sliced
- 1/4 cup Parmesan shreds
- 8 gluten-free flour tortillas
Begin by mixing your chicken with half of the caesar dressing. Mix well with a spatula or your hands to get the dressing into the nooks and crannies of the chicken. Refrigerate for at least 2 hours to marinade.
When ready to cook, preheat a skillet or grill pan to medium heat. Oil the pan lightly if necessary. Add the chicken and sear, cooking 6-8 minutes per side, depending on the thickness of the chicken. Once fully cooked, remove it to a plate and allow to cool slightly.
Once cooled, slice your chicken thinly and set it aside.
Next, add the romaine and Parmesan to a bowl with the other half of the dressing. Toss until the lettuce is well coated.
Grab a tortilla and fill it with some chicken and some lettuce mixture. Wrap up the tortilla and place it seam-side down.
In the same grill pan or cast-iron skillet, add your filled wraps seam-side down over medium-high heat. Allow the seam to brown but not cook, which will also keep it closed when eating. Once browned, remove the wraps to a plate.
Slice in half and serve with more dressing if desired. You can pack them at this point for a travelling lunch in a reusable container.
