Separate the seam in your pitted dates to create a pocket for the peanut butter.
Fill each date with about 2 teaspoons of peanut butter. Close the fold slightly and remove any excess peanut butter.
Freeze the filled dates for 30 minutes to 1 hour.
Melt the chocolate chips in a double boiler over barely simmering water. Once melted, dip each filled date seam side down. Coat just the top third of the date.
Set on a plate chocolate side up and place in the fridge to harden for one hour.
Store in a covered container in the fridge for up to one week. Perfect for gifts, parties, and healthy snacking.
