Apple Waffle Sundaes

As summer winds down, the perfect way to embrace late summer produce is with these Apple Waffle Sundaes, a lovely mashup of breakfast and dessert!

Ingredients
  

For the Waffles:

  • cups GF oat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¾ cup oat milk or whichever milk you prefer
  • 5 tablespoons unsalted butter melted and cooled slightly
  • 2 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla

For the Sundae:

  • 8 homemade GF waffles divided
  • 8 large scoops vanilla ice cream
  • 2 Honeycrisp apples diced small
  • Prepared salted caramel sauce for drizzling
  • Roasted pecans for topping

Instructions
 

  • Preheat your waffle iron. Whisk the flour, baking powder, salt, and cinnamon in a bowl.
  • In a separate bowl, whisk the milk, melted butter, eggs, sugar, and vanilla. Mix until completely combined.
  • Fold the wet ingredients into the dry until no dry flour remains. Do not overmix.
  • Place ¾ cup of batter into the waffle iron. Cook as per your machine’s directions until golden brown.
  • Remove the waffles onto a cooling rack. Place into a 300-degree oven to keep warm while you make the rest of the waffles.
  • To assemble, place 1 waffle onto a plate.
  • Place a scoop of ice cream into the center of your waffle. Top with apples, prepared salted caramel sauce, and pecans.
  • Serve immediately.
