The Perfect Tomato Sandwich

The BEST way to enjoy seasonal tomatoes is by making the Perfect Tomato Sandwich, a no-effort classic featuring homemade Herbed Mayo!

- 2 slices sliced gluten-free bread
- 1 large heirloom tomato, sliced 1/2-inch thick
- 1 pinch salt
For the Herbed Mayo:
- 3 tbsp mayonnaise
- 2-3 leaves freshly chopped basil
- 1 pinch dried Herbes de Provence
- 1/2 lemon, juiced
- 1/4 tsp salt
- 1/4 tsp pepper
Begin by toasting your bread, if desired.
Slice your tomato into hearty slices. Sprinkle them with salt to bring out the natural flavor of the tomato.
Next, make the Herbed Mayo. Combine all ingredients in a bowl and whisk to combine well.
Spread both sides of your bread liberally with the mayo. Top one side with a layer of tomatoes.
Top with the other piece of bread, mayo-side-down. Slice into triangles and enjoy!
