The Perfect Tomato Sandwich

The BEST way to enjoy seasonal tomatoes is by making the Perfect Tomato Sandwich, a no-effort classic featuring homemade Herbed Mayo!

Ingredients
  

  • 2 slices sliced gluten-free bread
  • 1 large heirloom tomato, sliced 1/2-inch thick
  • 1 pinch salt

For the Herbed Mayo:

  • 3 tbsp mayonnaise
  • 2-3 leaves freshly chopped basil
  • 1 pinch dried Herbes de Provence
  • 1/2 lemon, juiced
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Begin by toasting your bread, if desired.
  • Slice your tomato into hearty slices. Sprinkle them with salt to bring out the natural flavor of the tomato.
  • Next, make the Herbed Mayo. Combine all ingredients in a bowl and whisk to combine well.
  • Spread both sides of your bread liberally with the mayo. Top one side with a layer of tomatoes.
  • Top with the other piece of bread, mayo-side-down. Slice into triangles and enjoy!
