GF Mediterranean Orzo Salad

When the weather gets warmer, pasta salad is essential! GF Mediterranean Orzo Salad is a light and refreshing salad with feta, herbs, and gluten-free orzo!

- 1 lb. gluten-free orzo pasta
- 1/4 cup kalamata olives, chopped
- 1/4 cup dried apricots, chopped
- 4 oz. crumbled feta cheese
- 1 pint cherry tomatoes, diced
- 1 cup white beans, drained and rinsed
- 3/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- Juice of 1/2 lemon
- 2 tbsp freshly chopped parsley
- 2 tbsp freshly chopped basil
- 2 cloves garlic, minced
- 1 tbsp honey
- Fresh parsley leaves, for serving
- Fresh basil leaves, for serving
Boil your orzo as per the package directions. Drain and set aside.
In a large bowl, add the olives, apricots, feta, and tomatoes, and beans. Top with the drained orzo.
In a smaller bowl, whisk the oil, vinegar, lemon juice, parsley, basil, garlic, and honey. Mix well to combine.
Pour the dressing over the orzo and vegetables. Toss to combine.
Top with whole parsley and basil leaves and toss once more.
Chill for at least 2 hours to allow the flavors to meld. Serve cold.
