BBQ Chicken Flatbread Pizzas

Kids and adults alike love these BBQ Chicken Flatbread Pizzas, perfect for a quick appetizer at your football party! Gluten-free flatbreads are slathered in tangy BBQ sauce, juicy chicken, and caramelized onions before topping with melty mozzarella.

Ingredients
  

  • 1 cooked rotisserie chicken, meat pulled and bones discarded
  • 1 cup prepared BBQ sauce, divided
  • 3 gluten-free flatbreads or pita bread, we used O’Dough’s Gluten-Free Flatbread
  • 1 tbsp olive oil
  • 2 cups shredded mozzarella cheese
  • 1/2 cup caramelized onions, jarred or homemade
  • 1/2 tsp dried oregano

Instructions
 

  • Begin by pulling the meat from the bones of your rotisserie chicken. Discard the bones, skin, and any miscellaneous cartilage. Place into a bowl.
  • Top the chicken with half of the BBQ sauce and toss together. The chicken should be nicely coated in BBQ sauce. Set aside.
  • Preheat the oven to 400 degrees F.
  • Lay 3 GF flatbreads on a baking sheet greased with olive oil. You may need two sheets to fit the flatbreads. Divide the rest of the BBQ sauce evenly among the pitas. Spread the sauce leaving a ½-inch border around the edges. This is the “pizza sauce” layer.
  • Top with an even layer of pulled chicken. Then, top with cheese.
  • Finish with a few caramelized onions and a sprinkle of dried oregano on each pizza.
  • Bake for 10-15 minutes in a preheated oven until the cheese is melted and the crust is crisp.
  • Slice into shareable squares and serve as a main meal for 3-4 or appetizer for 6-8.
