Apple Fritter Muffins

Forget the fried pastries in favor of these delightfully moist Apple Fritter Muffins, perfect for breakfast, dessert, or a sweet snack!

- 1/3 cup packed brown sugar
- 1 tsp cinnamon
- 1 honeycrisp apple, peeled and finely chopped
- 1/2 cup white sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/3 cups all-purpose gluten-free baking flour mix
- 1/4 tsp xanthan gum (omit if your flour mix contains it already)
- 2 tsp baking powder
- 1/2 cup milk
In a small bowl, mix the brown sugar, cinnamon, and apples until the apples are well-coated. Set aside.
Preheat the oven to 350 degrees F.
In a mixing bowl, whisk the white sugar and butter until fluffy. Add the eggs and vanilla and mix well.
To the same bowl, add the flour, xanthan gum, baking powder, and milk. Whisk until the batter just comes together. A few dry spots within the batter are fine.
Line a muffin tin with liners or spray well with nonstick spray.
Fill each muffin cup ⅓ of the way. Top with a tablespoon of the apple mixture in each cup. Top with another few teaspoons of batter, leaving about ¼-inch of space from the top of the muffin tin. Top with a few more apples and repeat until all muffin cups are filled.
Bake for 20-22 minutes until golden brown and a cake tester comes out clean.
Remove from the oven and allow to cool slightly. Serve warm for breakfast or dessert.
