Many of us grew up eating toaster pastries for breakfast before heading off to school. While those days are long gone, it’s still fun and delicious to treat yourself and act on nostalgia. These days, there’s a gluten-free version for everything!
For breakfast, a snack, or dessert, make these crisp and fruity Apple Cinnamon Pop-Tarts, made with flaky GF puff pastry, a homemade apple filling, and tons of cinnamon flavor! Simply make the filling in under 15 minutes, fill the puff pastry, bake and enjoy! You can also make the optional icing for even more sweetness and notes of apple.
The Incredible Pop-Tart
Creating toaster pastries out of frozen puff pastry is so simple, anyone of any cooking level can do it! While this recipe as written has an incredible apple cinnamon filling, you can certainly make any filling your heart desires. Feel free to use jam, preserves, peanut butter, chocolate, or anything else you’d like!

Ingredients in Apple Cinnamon Pop-Tarts
- 2 Honeycrisp apples, peeled, cored, and diced
- ½ teaspoon ground cinnamon
- 2 tablespoons sugar
- 1 tablespoon butter
- a teaspoon vanilla extract
- 1 sheet gluten-free frozen puff pastry (such as Schar), thawed
Icing:
- 1 cup powdered sugar
- 2 teaspoons apple juice
How to Make Apple Cinnamon Pop-Tarts
To a medium saucepan, add the apples, cinnamon, sugar, and butter. Turn the heat to medium and cook until the mixture is bubbly, stirring occasionally.
Cook for 5 minutes until the apple mixture is thick and caramel-colored. Remove from the heat and allow to cool. Add the vanilla.
Preheat the oven to 375 degrees F.
Roll out your puff pastry and cut into 8 equal-sized squares.
Place 2-3 tablespoons of filling in the center of half the puff pastry squares.
Top with a plain pastry square and poke a few holes in the top to allow air to escape. Using a fork, pinch all seams and sides together by pressing lightly all around the pop-tart.
Bake for 20-22 minutes until crisp and golden brown.
Next, make the icing. Mix the sugar and apple juice until smooth.
Once the pop-tarts are cooled, drizzle the icing over the top. Enjoy!
