Having baked goods on-hand is always a good idea. They’re great for easy snacking after school or work, perfect for a fast breakfast, and can be that small, sweet bite after dinner. With just 30 minutes of your time, you can have a simple meal option for an entire week.

These reasons above are exactly why you should make some warm and moist Apple Fritter Muffins, which taste just like a deep-fried apple fritter! Packed with fresh apples, cinnamon, and gluten-free flour, these little muffins are perfect for any time of day. Simply make these at the beginning of the week for week-long snacking!

Fritters; Baked vs Fried

A typical bakery-made apple fritter is a fried doughnut stuffed with apples. In an attempt to stay healthier, these Apple Fritter Muffins are baked and not fried, saving on tons of calories and fat in the end. While fried fritters are delicious, they are not sustainable to eat for a week straight!

Baked fritters will be more friendly to your health and your wallet. A dozen fritters can get pricey, depending on the bakery. Making your own baked version at home is much more affordable and only takes 30 minutes of your time. Once you make these once, you will make them over and over again!

How to Make Apple Fritter Muffins

In a small bowl, mix the brown sugar, cinnamon, and apples until the apples are well-coated. Set aside.

Preheat the oven to 350 degrees F.

In a mixing bowl, whisk the white sugar and butter until fluffy. Add the eggs and vanilla and mix well.

To the same bowl, add the flour, xanthan gum, baking powder, and milk. Whisk until the batter just comes together. A few dry spots within the batter are fine.

Line a muffin tin with liners or spray well with nonstick spray.

Fill each muffin cup ⅓ of the way. Top with a tablespoon of the apple mixture in each cup. Then, top with another few teaspoons of batter, leaving about ¼-inch of space from the top of the muffin tin.

Top with a few more apples and repeat until all muffin cups are filled.

Bake for 20-22 minutes until golden brown and a cake tester comes out clean.

Remove from the oven and allow to cool slightly. Serve warm for breakfast or dessert.
