The idea of gluten free flour may seem like a contradiction. It’s important to remember that gluten is found in ONLY the following grains : wheat, barley, spelt, and rye. In most cases – not all – oat is gluten free. You should always check the package for gluten free.
Bob’s Red Mill was one of the first companies to pioneer gluten free flours. Their gluten free products are manufactured to the strictest standards. They have many different gluten free flours. Their basic one is a good choice.
King Arthur was known for excellent flours and their catalog was a baker’s paradise. When they came out with a gluten free flour I didn’t expect it could ever meet their standards. Boy was I wrong!
